Smothered Pork Chops

Total Time: 40 minutes

Main Dish Ingredients

2 boneless pork chops
1/2 tsp salt
1/2 tsp pepper
1 tsp paprika
1/4 cup flour
1 Tbsp olive oil
1 onion, sliced
1 tsp chopped fresh thyme
1/2 cup chicken broth
1/4 cup milk

Main Dish Instructions

  1. Sprinkle pork chops with 1/4 tsp each with salt and pepper; combine paprika and flour.
  2. Dredge pork in flour mixture, shaking off excess; reserve 3 Tbsp remaining flour mixture.
  3. Heat oil in a large skillet over medium-high heat; brown pork 2 to 3 minutes on each side.
  4. Remove pork from skillet, and keep warm; add onion and thyme to skillet.
  5. Saute 8 minutes or until tender; stir in reserved flour, and cook 1 minute.
  6. Whisk in broth and remaining salt and pepper; cook 10 minutes longer.
  7. Add milk and pork chops; cook 5 minutes or until sauce is thickened and pork chops are done.

Side Dish Ingredients

1 cup rice
1 romaine lettuce heart, chopped
2 Tbsp mayonnaise
1 Tbsp lemon juice
1 1/2 tsp olive oil
1 clove garlic, minced
2 Tbsp grated Parmesan cheese
1/4 tsp salt
1/4 tsp pepper

Side Dish Instructions

  1. Cook rice according to instructions.
  2. Place lettuce in a serving bowl.
  3. Whisk together mayonnaise, lemon juice, oil, garlic, Parmesan cheese, salt and pepper.
  4. Drizzle dressing over lettuce, and toss to coat.

Overall, this meal was really good and pretty easy to make.  The Caesar dressing was really good!!  The pork chop was really flavorful and moist.  I will be definitely keeping this recipe for the future!!
